1) Reserve your Side of Beef (1/2 Cow) today with this deposit of $500.

2) Come to one of our Pick-up Parties -OR- Schedule a personal delivery (for a fee of $150) or pick-up by appointment anytime.

3) Enjoy beef (and life) the way it should be!
A SIDE of Elite Beef (half a cow) is 230-250 lbs. of our pasture raised, grain finished Angus Beef.  All natural, no added hormones.  

AN ELITE SIDE INCLUDES:
  • 2-3 Chuck Roasts – 2-3 lbs each
  • Chuck Short Ribs – 4-Bone, 3-4 lbs
  • Dino Ribs – 3-Bone, 3.5-4.5 lbs
  • Brisket – whole, 10-14 lbs
  • 2 Chuck Eye Steaks – 1.5″ thick, 10-12 oz each
  • Sierra Steak – 1-1.5 lbs
  • 6–8 Denver Steaks – 3/4″-1″ thick, 8-12 oz each
  • 14–16 Boneless Ribeye Steaks – 1.5″ thick, 14-16 oz each
  • 12 – 14 KC Strip Steaks – 1.5″ thick, 18-22 oz each
  • 6–8 Filets – 2″ thick, 6-8 oz each
  • 8-12 Center Cut Sirloin Steaks – 1″ thick, 6-8 oz each
  • 2 Top Blade Steaks – 1.5-1.75 lbs each
  • Outside Skirt – 1 lb
  • Inside Skirt – 1-1.5 lbs
  • Flank Steak – 1.5-1.9 lbs
  • Picanha (roast or steak) – 2-3 lbs
  • Tri Tip (roast or steak) – 2-3 lbs
  • Sirloin Flap (roast or fajita) – 2.5-3.5 lbs
  • 6-8 Stew Meats – in 2 lb packages
  • 3-4 Hind Shank Soup Bones – 2″, 1-1.5 lbs each
  • Ground Beef:
    approx. 120 pre-made patties, 1/3 lb each
    50–60 1-lb "chubs" (unformed ground beef)
*Each cow yields different quantities and weights of cuts. Cuts included may vary slightly.

THE PACKAGING: All cuts (including ground beef patties) are individually vacuum sealed and labeled.  1-lb portions of ground beef are packaged in metal-free chubs (not vacuum sealed).

FREEZER SPACE: A Side of Beef requires approx. 15 cubic feet of freezer space.

SHIPPING:  We encourage regional sourcing as as part of The Return To Better Living, and insist on quality and freshness for every order of our beef.  For this reason, we do not offer shipping.  Instead, we offer pick-up and delivery by appointment, and host seasonal pick-up parties as a chance to form relationships and have fun!

OUR PROCESS:

We respect that Nature has its Seasons--and so do we!  Understanding the importance of freshness, we seasonally select the healthiest & fattest steer from our herds and process them locally to minimize stress and environmental costs. 
Our expert butcher lets the beef dry age to maximize flavor & tenderness, then produces the best cuts and grinds for delicious family meals.
We flash freeze and vacuum seal every cut to ensure its integrity.  Ground beef comes as vacuum-sealed, pre-formed burger patties, and 1-lb unformed tubes (we like to call them "chubs").
